Biscoff truffles recipe ingredients

We need just three ingredients. Isn’t it just great? For full details recipe and quantities, please refer to the recipe card at bottom.
Biscoff cookies – Also known as speculoos cookie. These cookies are known for it’s sweet and spicy taste. These are easily available in any grocery store or get it from Amazon.
Biscoff spread – I would recommend to use crunchy version of biscoff spread to add some bite in the truffles. But, if you have creamy version, it is fine to use that as well.
White chocolate – This is needed to add in truffles mixture and also to coat the truffles. I would highly recommend using high quality white chocolate (which you get in baking aisle of any grocery store). Why? Because, it is is easier to melt and gives equal coating for the truffles.
Any substitutes?
White chocolate – I have tasted these truffles with all chocolates (milk, white and dark) and biscoff flavor really goes well with white, in my opinion. If you prefer less sweet, replace it with either milk chocolate or dark chocolate. Add Crisco shortening or Wilton’s EZ dipping aid to smooth the consistency. Alternatively you can also use candy melts.
Tools needed
- Mixing bowls – to prepare the truffle mixture.
- Measuring spoons and cups – to measure ingredients.
- Weighing scale – to precisely measure ingredients.
- Baking sheet – to arrange the truffles.
- Parchment paper – to line into the baking sheet.
- Deep small bowl – to dip the truffles.
Biscoff truffles (step-by-step) recipe

- Add lotus biscoff cookies in food processor and crush them until they become like a fine crumb.
- Transfer the crushed cookies to mixing bowl. Add melted white chocolate and biscoff spread to the bowl.
- Mix well until properly combined.
- Cover with plastic wrap and refrigerate for 10-15 minutes.

- Line a baking sheet with parchment paper.
- Take a portion of truffles mixture using a small cookie scoop and roll is using palm of your hands.
- Place on prepared baking sheet.
- Repeat until the truffle mixture is finished. Freeze the truffles for one hour. This will help coating the truffles in melted white chocolate without creating a mess.

- Take one lotus biscoff truffle and dip it in melted white chocolate.
- Take a fork and move around in a bowl so that the entire truffle is coated with white chocolate.
- Remove and tap the spoon to remove excess white chocolate.
- Now place the coated truffle on baking sheet.

- Immediately, add some melted biscoff spread or crushed biscoff cookies on top so that it sticks to the truffle.
- Repeat for all truffles.
- Freeze again for 10 minutes.
- Serve and enjoy.
How to serve?
These biscoff truffles are the perfect and unique treat for any parties and must be served at room temperature.
- Store to satisfy your late night cravings. They are bite sized so you not dumping lot of calories too ;).
- Have it with a cup of coffee after a tiring day at office.

Storing and freezing instructions for the biscoff truffles recipe

You may have some leftovers or want to prepare and store them so that you can have it anytime you want to. Do not worry. Here are my storage or freezing advice.
Just like my other cake pops, you can either keep them at room temperature, in the refrigerator, or freeze them.
Storing instructions
At room temperature – Once the chocolate is hardened after refrigeration, store it in an airtight container in a cool, dry place away from direct sunlight. Store them in individual plastic bags to prevent sticking.
They stay ok for up to 3 to 4 days,
In the refrigerator – Place them in an airtight container and refrigerate for up to 1 week.
Freezing instructions
Freeze – Once the chocolate coating is hardened, store in an airtight container or freezer-safe bag.
They can stay ok for up to 2 months.
Thawing instructions
Similar to any dessert, thaw it overnight in the refrigerator or directly on the kitchen counter for not more than couple of hours (white chocolate may start melting).
Variations
Just tweak few core ingredients or coating chocolate and create variations of these mouth watering biscoff truffles.
- Biscoff coffee truffles – Add 1/2 teaspoon of instant coffee in truffles mixture. This will enhance the biscoff cookie flavors.
- Vegan biscoff truffles – Biscoff cookie and spread doesn’t contain any dairy. So, just replace white chocolate with dairy-free white chocolate and create vegan variety. Sounds interesting?
- Nutty biscoff truffles – This recipe uses crunchy biscoff spread, which will give bite to the truffles. Add choice of your favorite nuts in the truffle mixture. I have tried with almonds once but not any other nut. Please let me know if you add other nuts in the comment below. I would love to try that as well.
- Double chocolate biscoff truffles – Along with white chocolate, dip the truffles in milk or dark chocolate for a rich and chocolaty taste. I do not recommend using cocoa powder though as it will make the truffles dry.
Secret tips to make the biscoff truffles recipe

- Make a fine crumb – For that smooth truffle mouthfeel, make sure to finely crumb the lotus biscoff cookies. Any big chunk of cookie will ruin the texture and we definitely don’t want that. Use food processor or put the cookies in Ziplock and roll it using roller just like I did while making these mini cheesecake bites.
- Chill the truffles – We need to chill the truffles twice in this recipe. First, before dipping in the white chocolate and second, after garnishing with crushed biscoff crumbs. Do not rush the process in both scenarios.
- Do not overheat chocolate – Overheating might seize the chocolate and hence it will be difficult to coat. Melt the chocolate with 15 seconds interval (if using microwave) or melt it using double boiler method. Chocolate might get hard after dipping a coupe of freezed balls. Reheat again as mentioned and you will be good to go.
