Overview - No bake Cookie Dough

Non baked cookie dough recipe - ingredients

  • All-purpose flour -Use regular all-purpose flour here, nothing fancy. We need to heat the flour in order to make this no bake cookie dough. I have told that in step-by-step instructions below.
  • Sugar - Use regular caster sugar. You can also use granulated sugar but it is big in size compare to caster sugar. Heat from flour will help caster sugar to melt properly but may not be enough for granulated sugar. So, I would recommend to pass through mixer once
  • Brown sugar - I have used light brown sugar in this recipe. You can also use medium dark brown sugar and dark brown sugar too but color and flavor will be little different.
  • Milk - Use regular full fat milk. You can also replace it with any nut milk if you want to make it dairy free but make sure to replace butter too.
  • Unsalted Butter - Use your favorite unsalted butter. I like to control quantity of salt in my desserts so I always prefer to use unsalted but if you ran out of it, you can use salted butter. Just don't use salt mentioned in the recipe.
  • Salt - Regular table salt. As I mentioned above, skip this out if using salted butter.
  • Sprinkles/Funfetti - I have made this no cookie dough using sprinkles but you can try different variations by adding dark chocolate chips or chopped nuts or white chocolate chips or crushed Oreo. Anything which you want to add at that point of time :).

Step-by-step instructions to make cookie dough recipe

1. In a bowl, add all-purpose flour.

Edible no bake cookie dough - storing and freezing instructions

I would highly recommend to consume immediately after baking as it freshly made goods always tastes better but you can make this ahead of time and refrigerate or freeze.

You can store it in air tight container or Ziplock bags. This stays ok at room temperature for a day, 2-3 days in refrigerator and up to 4 months in freezer.

Secret tips to make best cookie dough

  • Heat-treat flour - It is very important to heat treat the flour to make it safe from any bacteria. To do this, just keep it in microwave for 15 to 20 seconds. This much time is enough for quantity of flour we are using. Again, each microwave is different so you may require more or less time depending on your microwave. PS - I am using LG microwave with 1100W power.
  • Correctly measure ingredients - Excess flour can make the cookie dough dry or insufficient liquid can make the dough dry. As I always say, take out your weighing scale before starting any recipe.

  • Can I add egg to this cookie dough? - No, I would not recommend to add egg to this cookie dough. Egg contains Salmonella and we need to cook eggs at certain temperature to get rid of it. Do not use egg here as there is no baking or cooking happening here.
  • Is it safe to eat? - Yes. Flour is treated by heating it so it is safe to eat this cookie dough.
  • How to store the cookie dough? - Please refer my storing and freezing instructions below to store the leftover cookie dough.
  • Can I use it somewhere? - You can break this in small chunks and use it in ice cream. It tastes delicious.
  • Can I bake this cookie dough and make cookies? - I would not recommend baking it. This recipe doesn't contain any leaveners so cookies will not turn out good. If you want to try regular baked cookies, try out my no brown sugar cookie recipe.
